Nicole introduced me to these yummy vegetarian/vegan veggie rolls. They can be a bit tricky to roll, but I think the trick is to not over-stuff them.
Time: 1 hour
Makes: 10-12 rolls
Ingredients:
Sauce:
- 3 tablespoons hoisin sauce
- 1 tablespoon chilli garlic sauce
- 1 tablespoon peanut butter
- 2 tablespoons water
Rolls:
- Rice paper
- Carrots, shredded
- Celery, shredded
- Pepper, shredded
- Green onion, chopped
- Cilantro, chopped
- Soy beans, chopped
- Lettuce, chopped
- Rice noodles
Directions:
- Blanche noodles, press out access water and dry.
- Prepare rice paper by soaking in lukewarm water for approximately 10 seconds.
- Spread rice paper on a towel and fill with veggies and rice noodles. Roll tightly. Cut each one in half and set out on a platter and serve with the sauce.
