A fun treat perfect for fall.
Time: 1 hour
Makes: 24 bars
Ingredients:
- 2 1/2 cups all purpose flour
- 2 tablespoons pumpkin pie spice
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup butter
- 1 3/4 cups sugar
- 1 large egg
- 1 1/2 cups pumpkin puree
- 2 tablespoons pure vanilla
- 1 1/2 cups dark chocolate chips
Directions:
- Preheat the oven to 350 degrees.
- On a large piece of parchment paper, sift together the flour, pumpkin pie spice, baking soda, and salt. Set aside.
- In a stand mixer fitted with the paddle attachment, beat the butter on medium speed. Add the sugar and beat until light and fluffy. Add the egg, pumpkin puree, and vanilla and beat until fully combined.
- Turn the mixer on low and add the dry ingredients and mix until fully combined. Fold in the chocolate chips. Spread the batter evenly into a prepared 9×13 baking pan and smooth the top with a small offset spatula or the back of a spoon. Bake in a preheated oven for 40 minutes or until a wooden skewer inserted into the centre comes out clean.
- Remove from the oven and allow to completely cool in the pan.
- Run a small knife along the edges of the pan. Carefully remove the blondies from the pan and cut them into approximately 2×2-inch bars. Make sure to use at least a 10-inch knife to avoid cutting and dragging the knife across the bars.
