Another great recipe from my mother-in-law. This is a great dish that everyone loves and it is so easy to throw together.
Time: 1 hour
Serves: 4-6
Ingredients:
- 1/4 cup flour
- 3 teaspoons salt, divided
- 1/2 teaspoon pepper
- 1/2 teaspoon thyme
- 1/4 cup butter
- 4 chicken breasts or 8 boneless skinless chicken thighs, cut into 1-2 inch pieces
- 1/2 cup sliced mushrooms
- 2 tablespoons lemon juice
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/3 cup apple juice
- 4 green onions, chopped
Directions:
- Mix flour, two teaspoons of salt, pepper and thyme in a plastic bag. Place the chicken pieces in the bag and shake to coat with flour mixture.
- Melt butter in a frying pan and brown chicken in it. Remove and place in a casserole dish.
- Add mushrooms to the pan and cook for three minutes. Add green onions and place in the casserole dish with the chicken.
- Combine apple juice, lemon juice, sugar, and salt. Pour over chicken mixture and bake at 250 degrees for 45 minutes.
- Serve with rice.
